ETHIOPIA Shakiso Kayon Mountain Farim

Kayon Mountain farm is located in the southern Guji zone of Shakiso. Kayon Mountain farm is family owned and operated, and they process coffee from their farms as well as from outgrowers in the surrounding Kebeles (towns). Kayon Mountain farm have built out their own wet and dry milling facilities, handling all post-harvest milling themselves, and oversee quality management and preparation for export. Like most of the country, the farm is planted in regional, distinct local strains of coffees that have spread from the wild forest plants of western Ethiopia, to Harar in the East and to the southern districts like Guji. This particular lot was wet-processed, meaning that after the cherry is removed from the seed, the sticky mucilage layer that surrounds the bean is removed after fermenting for 24-36 hours in water (this varies from region to region), before then being removed and laid out to dry on raised drying tables. Unlike some other washed coffees, this late 2018 arrival has complex herbal and rustic berry qualities that I think will appeal to fans of dry process Ethiopian coffees. This lot from Kayon Mountain shows best when roasted to medium and even darker roast levels (Full City) where a rustic palm sugar sweetness comes through, dark fruit flavors are at the forefront, and herbal overtones add contrast and complexity. The dry fragrance has a scent of unrefined sugars with citrus peel accents, and a green tea-like aroma comes through after adding hot water, along with caramel and cola. The cup shows strong fruited character at Full City, blueberry, dried cranberries, orange and dried natural peaches come to mind. Perfumed herbal flavors and aromatic highlights add an interesting twist with hibiscus tea being notable and a mild jasmine floral note once cool. There's a rustic overlay that comes off like aromatic woods and pipe tobacco, which gives this coffee a bit of a 'dry process' appeal.
